Summer fruit and Greek yoghurt ice lollies for hot August days

August is one of the best months of the year for British fruit. Strawberries, raspberries, and blackberries are all at their peak right now - and if you're looking for a delicious way to make the most of them before the season moves on, this is it.

These fruit and yogurt ice lollies take about ten minutes to put together and need no special equipment. The method is super simple so your little ones can get involved, making it a recipe the whole family will love.

For this recipe, we‘ve used Ann Forshaw's Greek-style yogurt from our Best of Local range. It’s thick, creamy, and gives the lollies a deliciously rich texture. Pair it with your favourite summer berries for the perfect balance of creaminess and tart sweetness.

 

Makes: Approx 6 lollies, depending on the size of the moulds used

Prep time: 10 minutes

Freezing time: 4-6 hours or overnight

Equipment: Ice lolly moulds and sticks, or small paper cups and wooden lolly sticks

 

Ingredients

• 2 pots Ann Forshaw's Greek-style yogurt

• 200g fresh strawberries, raspberries, or blackberries

• A small splash of Creamline whole milk to thin the mixture slightly


Method

1. Remove any leaves, stems or pits from the berries. Roughly mash the fruit in a bowl with a fork – the kids can definitely give a helping hand here! A few fruit chunks in the finished lolly are no bad thing, they just add a little more texture.

2. Stir in the yogurt and a small splash of milk until combined. The mixture should be thick but pourable.

3. Spoon the mixture into lolly moulds or paper cups. If using paper cups, cover the top with a small square of foil and push a lolly stick through the centre to hold it upright while the lollies freeze. It might sound fiddly, but it only takes a few seconds.

4. Freeze for at least 4-6 hours, or overnight for best results.

5. To release, run warm water briefly over the outside of the mould and gently ease the lolly free.


How to make your lollies taste even better

 The different fruits you use in your lollies can give quite different results – why not mix up the berries and make a few different lollies? Strawberries make a sweeter, milder lolly, while raspberries bring a little sharpness that works well against the creaminess of the yogurt. Blackberries give a deeper flavour and a lovely purple colour - great if you want something that looks a bit more dramatic, but beware of purple stains on tiny hands!
