Ingredients for the pancakes
1 pinch of salt
1 tsp castor sugar
2 whole eggs
280ml whole milk
1 tablespoon oil
butter for the pan
Ingredients for the strawberry filling
450g of fresh strawberries
70g granulated sugar
1 orange, zest and orange
150ml whipping cream
1. For the pancakes: sieve flour and salt into a bowl. Mix the egg, sugar, milk and oil in another bowl. Add the liquid ingredients to the flour and salt mixture.
2. Heat a knob of butter in a pan over a medium heat. Add a small ladle-full of the batter. Swirl the pan straight away so that the batter is spread evenly across the bottom. When the bottom side is lightly browned, flip the pancake and heat the other side until lightly browned too. Do the same with the remaining batter.
3. For the filling: melt the butter in a frying pan. Add the sugar, orange zest and orange juice and bring it to the boil, now add a good size helping of freshly prepared and halved strawberries.
4. Serving: Fill the pancakes with the hot strawberry filling and serve immediately with freshly whipped cream.
