WIN the ingredients for our chicken Thai curry recipe!

To celebrate the launch of our new chicken (or chickpea!) Thai curry and lime recipe, we’re giving away the ingredients for two to FIVE lucky winners – so you can enjoy a healthy midweek meal on us!

This scrumptious exotic recipe was created by SpamellaB, a local culinary extraordinaire who whips up stunning sweet and savoury recipes that are both nutritious and delicious for everyone to enjoy.

So, what’s included in the bundle? Delivered directly to your doorstep, if you’re a lucky winner you’ll find a bundle of free-range chicken fillets from Little Pigs Didsbury and a vibrant selection of fresh produce, including butternut squash, spinach, green beans, garlic, onion, coriander and zesty lime. That’s curry night sorted! Here’s how you can enter…

Tips and tricks for the recipe

If you’ll be giving the recipe a go, here are some extra tips and tricks to help you make the most of this dish:

Balance the flavours: Thai cuisine is known for its perfect balance of sweet, sour, salty and spicy. Adjust the amount of lime and coconut to suit your ideal balance and add in some fresh chillis if you fancy some extra spice.

Fresh herbs: They’re essential! As well as mixing the coriander with ginger, lime zest and juice and seasoning, make sure you garnish the dish with a handful of the coriander for an extra burst of aroma – and for presentation purposes!

Toast extra spices: Toasting spices like cumin and coriander seeds in a dry pan before grinding them can enhance their flavour and aroma. Just be careful not to burn them!

Leftovers: Thai curry often tastes even better the next day as the flavours continue to develop. Consider making extra for delicious leftovers for the whole family.
