Three delicious recipes to beat Christmas food waste

While Christmas is the most wonderful time of the year, it’s also known as one of the most wasteful. The stats around Christmas food waste certainly pile up with Respect Food finding that 2 million turkeys, 5 million Christmas puddings, and 74 million mince pies get disposed of while still edible over the festive period. That amounts to almost 270,000 tons of food! While that’s a lot of money (and gravy!) down the drain, the environmental impact when food ends up in landfill is also huge. As food waste rots and degrades in landfill, it generates methane, a gas many more times harmful to the planet than carbon dioxide.

With much of the Christmas food going to waste still edible, making the most of your leftovers is a no-brainer way to go greener this Christmas. From turkey risotto to peanut and soy sprouts stir-fry, we’ve compiled our top three festive leftover recipes from across the foodie internet for you to try out.

Turkey risotto

In the build up to Christmas, it’s easy to over-buy when it comes to festive food in the worry that there won’t be enough for everyone. Often the centrepiece, meat is a key area where many people go overboard.

Post-Christmas turkey sandwiches are a classic but if you’re fancying something more inventive which will feed the family for days, look no further than this leftover turkey risotto from Kitchen Sanctuary. It’s satisfying, delicious and adaptable – if you chose another roast for your centrepiece, simply swap out the turkey in the recipe.
