Instructions for use
- Cumberland Sausage
Grill over medium heat.
Cook for 15–20 minutes, turning regularly.
Avoid very high heat to prevent the skins from splitting.
Internal temperature: 75°C (167°F). - Smash Burger Patties
Cook over high heat on a flat griddle or hot BBQ plate.
Cook for 2–3 minutes per side for thin smash burgers.
Add cheese during the last minute if desired.
Internal temperature: 70–75°C (158–167°F) - Pork Belly Pieces
Start over indirect medium heat for 30–40 minutes to render fat.
Finish over direct heat for 5–10 minutes, turning frequently, until crisp and caramelized.
Internal temperature: 75°C (167°F) minimum; many people prefer pork belly cooked higher (around 85–95°C) for tenderness. - Double-Smoked Chicken Drumsticks
Cook over medium indirect heat.
BBQ for 25–35 minutes, turning occasionally.
Finish over direct heat for a few minutes if you want crispier skin.
Internal temperature: 75°C (167°F) at the thickest part, away from the bone.
